Visit to a Coconut Candy Factory

Today Michael Aulisio of Thomas Nelson Publishers and I took a tour of the Mekong Delta in Vietnam and toured a coconut candy factory, of sorts — a little local business in the middle of a coconut farm. The enterprise was so novel that I wanted to share the pictures with you.

Hundreds of Coconut Palms surround the factory
The coconuts are pollenated by bees
Harvested coconuts are pressed by hand
The press yields a milky substance
The substance is boiled down over a fire
And poured out onto a working surface
And shaped in groves and cut into small pieces
Each piece is wrapped by hand
All under the watchful eye of the faithful guard dog
